I have been dreading this practical for nearly two years.  While researching culinary schools, I came across a blog entry about Le Cordon Bleu and it’s infamous lapin butchering practical.  I have to admit that it played a role in my decision to only enroll in patisserie last June.  I was already intimidated by cuisine, but to have to deal with that, on top of studying patisserie and adjusting to Paris…it was just too much!  Or so I thought.

Halfway Through Basic Cuisine

Life has been so busy lately that I haven’t been able to update in awhile.  I have a slew of exciting posts that I hope to get up soon, but first I want to make a little update about my cuisine course.  I was really unsure about how I would do, and almost sure that I wouldn’t continue with the full diploma, but I realized that I really love cooking.  It’s an entirely different world from patisserie, but in a way I feel more comfortable with it.  There’s a sense of freedom and instinct involved that I enjoy and bounce off of.  It’s too early to tell if I’ve change to a cuisine girl, but the competition is coming in close.

The Greek Experience: Chalkidiki

Apart from exploring Thessaloniki, my friend took me around Chalkidiki, a series of peninsulas in northern Greece.  We stayed overnight in one village called Afitos and did a day trip to a very small beach called Kavourotripes.  Both were amazingly scenic, especially Kavourotripes, and on the way we ate some really great food as well.

The Greek Experience: Thessaloniki

After my sister went back to the States, I drowned my farewell sorrows by going to Greece!  I have a friend from college who spends every summer in Thessaloniki, a small city in northern Greece, so I decided to visit her for a few days.  People always say that the best way to travel is to know a local, and I definitely experienced the truth of that during this trip.  The places we went and the restaurants we ate at were side street wonders and local joints.  It also didn’t hurt that my friend is a Hellenic Studies master.  She was like my own pocket professor giving me lectures about everything from ancient history and architecture to modern politics.  It was great!  She also introduced me to the real flavors of Greek cuisine.  Bright and fresh, and I never knew Greek food went beyond the street food gyro.  I left completely enamored by the food and inspired to cook with those elements back home.

Tried something new yesterday 🍞🎞🎬! Tried something new yesterday 🍞🎞🎬!
Heyyyy I wrote a post! (Yes...it's been a while.) Heyyyy I wrote a post! (Yes...it's been a while.) It's about the smash cake I made for my baby's 1st birthday--an easy recipe made with wholesome ingredients and sweetened with fruits only. 

Even though the cake has no butter, oil, and refined sugar, it still has great bounce and fluff 💫. I frosted it with whipped, unsweetened Greek yogurt and heavy cream, and my baby loved digging into it on her birthday (see last photo). 

The cake also makes a nice snack or breakfast. For that, I skip the frosting and serve plain or I'll make little cake balls with Greek yogurt and hemp seeds which makes it even more filling and nutritious 😋.

This recipe is super quick and simple, and there are a lot of different variations that can be made--all of which are written out in my post. Check out the recipe from the link in my profile!

First bake post baby! I had to restart midway beca First bake post baby! I had to restart midway because I forgot the sugar 🤦🏻‍♀️. I almost quit because time was running out until the next 🤱🏻 and I still needed to finish up some other chores and food prep for the week. But I’m so happy I made it happen—even though the result wasn’t perfect. I’ve been wanting/needing to scratch that baking itch for awhile now 🙃. Any guesses on what I made? 🌽
Happy Lunar New Year 🐂!! I spent the last two m Happy Lunar New Year 🐂!! I spent the last two months being spoiled and taken care of by my mom. During that time I learned so much from her on how to be a mom and cook her food—the best in my opinion 😆. 

This is my attempt at the 떡만두국, tteok mandu guk, rice cake and 🥟 soup, that she taught me. It’s not quite the same, but hoping that one day my cooking will be as comforting and special to my daughter the way my mom’s is to me 💗.

It's been a tough year to say the least, but I hope everyone is able to find a silver lining in all of this. For me, it was having the space to enjoy my pregnancy quietly and with those closest around me, and giving birth to a healthy baby during a pandemic. ⁠

I don't know what's in store for 2021, but I think I'd be ok if it was a little less explosive than this year 🤣.⁠
