Croissant à la Vanille, Pouchkine

I’ve been doing a little reminiscing about my time in Europe these last couple of days; going over places I visited and things I ate.  I don’t really miss being there, but sometimes I do get fleeting thoughts that maybe I didn’t take full advantage of all my surroundings. However, I don’t have big regrets and I know I’ll go back again…just maybe not soon.  In the meantime, here’s one of my favorites from Paris: Pouchkine‘s Croissant à la Vanille. My friend who interned there introduced me to it and it’s absolutely amazing. There are tons of different croissants in Paris, but this one stands out as most memorable for me. It has the perfect ruffle and crisp of a croissant with a defining presence of vanilla in the middle. It’s quite large for one person so I always split it with a friend, but I’m beginning to feel like maybe I shouldn’t have!

My friend didn’t quite find out the secret to that filling (which is more of a buttery addition than a filling filling), but maybe one day she’ll whip up something similar at her newly opened patisserie in Quebec! I’m dying to go, and one day I will, but if any Quebecer readers are out there, check it out!

Moving On

It’s taken me awhile to get myself to write this post, but here goes: I’m leaving France.  It was a really difficult decision, one that made me lose a lot of sleep and tears, but it just felt like time to move on.  It’s a bit bittersweet and sometimes I think about what if and should I have…but at the end of the day, in my gut, I am certain I made the right choice.  I don’t know exactly where I’m going or what I’ll be doing but as much as it is scary, I’m also quite excited.  Racing towards an unknown, I can’t wait to tell you about everything I discover on the way.

Petits Voyages: Lille

Out of the three mini trips I did during the past few weeks, I was probably most enamored by Lille.  The Flemish brick lined architecture and cute narrow streets made me feel like I was truly transported into my imagination of what small European towns are supposed to look like. Quant and so adorable, half the time I felt like I was walking on a prop set.

Tried something new yesterday 🍞🎞🎬! Tried something new yesterday 🍞🎞🎬!
Heyyyy I wrote a post! (Yes...it's been a while.) Heyyyy I wrote a post! (Yes...it's been a while.) It's about the smash cake I made for my baby's 1st birthday--an easy recipe made with wholesome ingredients and sweetened with fruits only. 

Even though the cake has no butter, oil, and refined sugar, it still has great bounce and fluff 💫. I frosted it with whipped, unsweetened Greek yogurt and heavy cream, and my baby loved digging into it on her birthday (see last photo). 

The cake also makes a nice snack or breakfast. For that, I skip the frosting and serve plain or I'll make little cake balls with Greek yogurt and hemp seeds which makes it even more filling and nutritious 😋.

This recipe is super quick and simple, and there are a lot of different variations that can be made--all of which are written out in my post. Check out the recipe from the link in my profile!

First bake post baby! I had to restart midway beca First bake post baby! I had to restart midway because I forgot the sugar 🤦🏻‍♀️. I almost quit because time was running out until the next 🤱🏻 and I still needed to finish up some other chores and food prep for the week. But I’m so happy I made it happen—even though the result wasn’t perfect. I’ve been wanting/needing to scratch that baking itch for awhile now 🙃. Any guesses on what I made? 🌽
Happy Lunar New Year 🐂!! I spent the last two m Happy Lunar New Year 🐂!! I spent the last two months being spoiled and taken care of by my mom. During that time I learned so much from her on how to be a mom and cook her food—the best in my opinion 😆. 

This is my attempt at the 떡만두국, tteok mandu guk, rice cake and 🥟 soup, that she taught me. It’s not quite the same, but hoping that one day my cooking will be as comforting and special to my daughter the way my mom’s is to me 💗.

It's been a tough year to say the least, but I hope everyone is able to find a silver lining in all of this. For me, it was having the space to enjoy my pregnancy quietly and with those closest around me, and giving birth to a healthy baby during a pandemic. ⁠
