Blueberry Oatmeal Smoothies with Spinach

In an attempt to eat more fruits and veggies, I’ve been meal prepping smoothies to stash in the freezer. The original intention was to have them up for breakfast, but my husband and I have found that we actually prefer whipping them up after dinner–for some reason eating smoothies with a spoon makes it feel like dessert 😝.

Our current favorite is a smoothie that’s made with blueberries, rolled oats, spinach, banana, greek yogurt, almond milk, and a dash of cinnamon. The rolled oats add body and coziness to the smoothie, while the banana, greek yogurt, and almond milk make it taste like froyo. The best part though is that even though there’s a handful of spinach in there, you can’t taste it at all. Win!

Whether you want this for breakfast or dessert, the key to making it come together fast is to freeze individual portions separately. I like to use these great reusable food bags from Stasher to minimize plastic waste (the sandwich size is perfect here), but you can also use whatever freezer-friendly container you have on hand. Also, before putting these smoothie packs together, I like to freeze Greek yogurt in an ice cube tray. This makes it super easy to pack with the other ingredients, and no need for extra ice when blending.

Description

A healthy smoothie made with blueberries, rolled oats, spinach, banana, and Greek yogurt. It’s so good, it tastes like dessert!


Ingredients

1/3 cup (50g) blueberries
1/4 cup (24g) rolled oats
Small handful of baby spinach (25g)
1 medium banana, but into pieces
1/4 teaspoon cinnamon
1/4 cup (50g) Greek yogurt (2 frozen cubes)
1 cup (240g) almond milk (or milk of choice)
Toppings of choice (ex. almonds, rolled oats, flaxseeds, etc)


Instructions

1. Place all ingredients except the almond milk into a container and freeze. 

2. When ready to eat, place the frozen smoothie ingredients into a blender with the milk. Blend until smooth. Top with almonds, rolled oats, flaxseeds, or anything you desire! 


Notes

Smoothie packs can be kept in the freezer for up to 2 months.

Heyyyy I wrote a post! (Yes...it's been a while.) Heyyyy I wrote a post! (Yes...it's been a while.) It's about the smash cake I made for my baby's 1st birthday--an easy recipe made with wholesome ingredients and sweetened with fruits only. 

Even though the cake has no butter, oil, and refined sugar, it still has great bounce and fluff 💫. I frosted it with whipped, unsweetened Greek yogurt and heavy cream, and my baby loved digging into it on her birthday (see last photo). 

The cake also makes a nice snack or breakfast. For that, I skip the frosting and serve plain or I'll make little cake balls with Greek yogurt and hemp seeds which makes it even more filling and nutritious 😋.

This recipe is super quick and simple, and there are a lot of different variations that can be made--all of which are written out in my post. Check out the recipe from the link in my profile!

First bake post baby! I had to restart midway beca First bake post baby! I had to restart midway because I forgot the sugar 🤦🏻‍♀️. I almost quit because time was running out until the next 🤱🏻 and I still needed to finish up some other chores and food prep for the week. But I’m so happy I made it happen—even though the result wasn’t perfect. I’ve been wanting/needing to scratch that baking itch for awhile now 🙃. Any guesses on what I made? 🌽
Happy Lunar New Year 🐂!! I spent the last two m Happy Lunar New Year 🐂!! I spent the last two months being spoiled and taken care of by my mom. During that time I learned so much from her on how to be a mom and cook her food—the best in my opinion 😆. 

This is my attempt at the 떡만두국, tteok mandu guk, rice cake and 🥟 soup, that she taught me. It’s not quite the same, but hoping that one day my cooking will be as comforting and special to my daughter the way my mom’s is to me 💗.

It's been a tough year to say the least, but I hope everyone is able to find a silver lining in all of this. For me, it was having the space to enjoy my pregnancy quietly and with those closest around me, and giving birth to a healthy baby during a pandemic. ⁠
