Intermediate Thus Far

Here’s a short photo summary of what’s been going on in school.  Enjoy!

Lesson 1: Gateaux: Streusel & Pavé aux Amandes

The streusal consists of a puff pastry base, fromage blanc and apricot filling, and a crumble top.   The pavé aux amandes is a gluten free cake made with just butter, sugar, eggs, and almond meal.

Lesson 2: Les Tartes: Tarte Passion-Framboise

The tart is filled with a layer of raspberry coulis and passion fruit cream.

Lesson 4: Fraisier

Strawberry cake made with a genoise sponge, mousseline cream, and Italian meringue.

Lesson 5: Macaron

Macaron shells filled with anis flavored pastry cream, raspberries, and raspberry coulis.

    I know! When I first met you I wanted to give you a hug or something, but I thought that would be crossing some boundaries…We need to do a bakeout together soon!

    I can only look at these pics and dream that just one day..I will be able to whip up something like these!
    The strawberry cake looks soo pretty…and i love the outer crusts on the jamaique with the nuts!

    Congrats on passing the exam! I can’t remember if I already posted that. The cheese photos from last post were lovely and tantalizing as well. Good luck with the intermediate section. Question: Do you have to taste everything you make?

    i wanted to do the exact same thing and that same thought went through my mind too! haha i thought it would be too strange of me. and yes please definitely. a bake-out session is called for on an occasion like this. c: along with a pastry-tasting session of the famous patisseries in paris! hehhh

    We don’t have to do an official tasting in class, but I always give my cakes tributes at home!

    Sometimes I give them to friends, other times I leave it at school where other students can have a tasting, and I also bring them home for dessert.
