Way to go on the NaPoBloMo endeavor! I actually made mini meatloaves very similar to this over the weekend. I just formed the meat into balls with an ice cream scoop, transferred them to a muffin tin, and baked for 30 mins. You need to drain the fat at the end but it’s a great no-fuss, quick way to make meatloaf.
